Abstract(s)
Introdução: Os hábitos alimentares saudáveis devem começar a ser desenvolvidos desde a primeira infância, com o intuito das crianças terem um bom crescimento. As entidades que prestam o serviço de elaborar as ementas do planeamento e fornecimento de refeições escolares deverão garantir refeições seguras, nutricionalmente adequadas, equilibradas, variadas e completas, não negligenciando a contextualização social, cultural e ambiental. As ementas deverão ser variadas, procurando diversificar os métodos de confeção, respeitando as regras da culinária saudável. Sendo muito importante uma alimentação adequada das crianças, é necessário que as escolas disponibilizem ementas saudáveis e avaliem se se a sua elaboração está de acordo com as necessidades das crianças. A avaliação da qualidade das ementas pode ser quantitativa (contabilização dos macro e micronutrientes dos alimentos constituintes das refeições) e qualitativa (respeitos por critérios relacionados com os “itens gerais do prato completo”, “carne, pescado e ovo”, “acompanhamento de cereais, derivados e tubérculos”, “acompanhamento de hortícolas e leguminosas", “sopa” e “sobremesa”). Objetivo: A finalidade deste trabalho foi a avaliação qualitativa de uma amostra aleatória de 56 ementas, para crianças de 1 a 5 anos, de uma instituição do ensino pré-escolar na região de Alenquer. Metodologia: Esta avaliação foi realizada tendo por base os critérios propostos por Bessa e colaboradores em 2009. Resultados: Globalmente, as ementas avaliadas obtiveram uma avaliação “Boa” (conforme os critérios utilizados) com um resultado de 76 % da pontuação qualitativa obtida (máximo 100%), o que nos indica que estão a ser respeitados, na generalidade, os critérios necessários para que se considerem equilibradas as ementas da instituição. Conclusão: A amostra de ementas do ensino pré-escolar da região de Alenquer analisadas mostram uma boa classificação do ponto de vista qualitativo, todavia, existem ainda vários aspetos passíveis de ser melhorados. O facto de as ementas avaliadas serem de uma instituição de ensino pré-escolar tutelada por uma Instituição Particular de Solidariedade Social faz com que estes resultados não possam ser extrapolados a toda a realidade do município de Alenquer, nomeadamente instituições com tutelas distintas.

Entities that provide the service of preparing the menus for planning and supplying school meals, must guarantee safe, nutritionally adequate, balanced, varied and complete meals, not neglecting the social, cultural and environmental context. The menus should be varied, seeking to diversify the cooking methods, respecting the rules of healthy cooking. Since children's nutrition is of such importance, it is necessary for schools to be able to provide healthy and nutritious menus and for there to be ways of being able to assess whether the menus are being prepared correctly, with everything that children need. The evaluation of the quality of the menus can be done in quantitative terms, in which the macro and micronutrients of the foods that make up the meals are accounted for, and qualitatively. Objective: This work aimed to carry out a qualitative assessment of a sample of 56 menus (randomly chosen) of pre-school education in the region of Alenquer, for children from their first year of life to 5 years old. Methodology: This evaluation was carried out based on the criteria proposed by Bessa et al. in 2009. Results: As a whole, the evaluated menus obtained a “Good” evaluation (as defined in the criteria used) with a result of 76% of the qualitative score obtained (maximum 100%), which indicates that they are being respected in general. the criteria considered necessary for balanced menus to be considered. Conclusion: The sample of pre-school education menus in the region of Alenquer analyzed show a good classification from a qualitative point of view, however, there are still several aspects that can be improved. The fact that the evaluated menus are from a group supervised by a Private Institution of Social Solidarity means that these results cannot be extrapolated to the entire reality of the municipality of Alenquer.
