  • Agrio et Emulsio – development of fruity mustard creams

    Agrio et Emulsio project (POCI-01-0145-FEDER-023583) presents an proposal in the areas of vinegar products and food emulsions. Combining technical features with mediterranean traditions and Nouvelle Cuisine, two prototypes of fruity mustards are undergoing final development, valuing regional raw materials and profiling into the gourmet/vegan/veggie markets. Mustard creams are oil-in-water emulsions but its practice is linked to vinegar traditions since the thirteenth century, in France, with the foundation of the first confraternity of Maîtres Vinaigrier-Moutardier. Thus, by applying the ancestral practice, mustard (seeds, fragments, powder) was first submitted to maturation studies, varying the type of vinegar and the time of immersion/contact. Maturation reached equilibrium on the 16th day, but pH evolution shows a practically stationary state from the 7th. Best results were obtained with seeds and powdered mustards in red wine vinegar, 4 %(m/v) acidity. The assays were carried out at room temperature using Sinapis Alba (Linnaeus) mustard species. Prototyping articulated technical, analytical (physicochemical, rheological, microbiological) and sensory tests. Each final prototype has a distinct profile of ingredients, mustard, fruits (raspberry and beet or blueberry), olive oil, water, salt, sugar, honey and spices. Both creams retain the sui generis taste of mustard tinted with the fruit flavour plus an innovative pink colour.

    A aptidão tecnológica do vinagre permite desenvolver múltiplos produtos. Neste projecto (2009 -) criaram-se processos de aromatização múltipla e de conservação ácida de frutos doces em vinagre, incomuns na indústria vinagreira. Articulando ensaios tecnológicos, analíticos e provas sensoriais, desenvolveram-se dois vinagres vínicos com adições (com mirtilo e com mel e especiarias), dois vinagretes aromatizados (de laranja, de physalis) e por tecnologia de piclagem fresh pack (não fermentativa), dez pickles agridoces: pêra-abacaxi, pêra “bêbeda” (cinco variantes), com physalis (simples, com murta ou mirtilo) e de abóbora com pêra e pequenos frutos. Todos os protótipos cumprem os requisitos de estabilidade. Possuem, em comum, inovação e conveniência: novos produtos, com longo tempo de vida de prateleira, são alternativas para a preservação de frutos caros/sazonais/excedentários.

    O vinagre é obtido por dupla fermentação alcoólica e acética de substâncias de origem agrícola, possuindo cada tipo um flavour particular, função dos substratos e tecnologia usados, mantendo gosto sui generis ácido. A sua aptidão tecnológica viabiliza o fabrico de múltiplos produtos, macerando especiarias, plantas, etc, conduzindo ao enriquecimento da matriz, cujo perfil químico ganha complexidade e novas características sensoriais/funcionais. A picklagem fresh pack é um processo alternativo de conservação em vinagre, sem fermentação. Com vinagres de fermentação submergida, desenvolveram-se na ESAS (2009-2013), dois vinagres e um vinagrete com adições e um pickles de frutos doces, articulando ensaios tecnológicos, laboratoriais e sensoriais. Concebidos como produtos gourmet, pretendeu-se oferecer inovação e conveniência. Além do longo tempo de vida de prateleira, evidencia-se: 1) no vinagre de vinho branco com mirtilo –a mais-valia de preservar o fruto inteiro, por efeito de picklagem; 2) no vinagre agridoce, de vinho tinto Touriga Nacional com mel e especiarias –uma tónica agridoce equilibrada e actual; 3) no vinagrete de laranja aromatizado –a complexidade aromática aliada à sensação de frescura na boca; 4) no pickles fresh pack de pera-abacaxi agridoce –novidade e dupla utilização: consumida a fruta, a infusão utiliza-se como vinagre de mesa (aptidão incomum em pickles).---Vinegar is obtained by double fermentation alcoholic and acetic of substances from agricultural origin, each type having one particular flavor, due to the technology and the substrates used, while maintaining sui generis acid taste. Its technological aptitude enables the manufacture of multiple products, macerating spices, plants, leading to the enrichment of the matrix whose chemical profile becomes increasingly complex with new sensory/functional characteristics. The fresh pack process is an alternative process of pickling, without fermentation. With submerged fermentation vinegar, two vinegars and a vinaigrette with additions and pickled sweet fruits were developed in ESAS (2009-2013), articulating technological, laboratory and sensory tests. Designed as gourmet products, intended to provide innovation and convenience. In addition to the long shelf life, stands out: 1) in white wine vinegar with blueberries – the added value of preserving the whole fruit by pickling effect, 2) in bittersweet red wine vinegar, Touriga Nacional with honey and spices – the sweet and sour taste, balanced and fashionable; 3) in flavored orange vinaigrette – the aromatic complexity coupled with the fresh sensation in the mouth, 4) in the fresh pack sweet and sour pickles with pear-pineapple – the innovation and dual-use: consumed the fruit, infusion is used as table vinegar (unusual application for pickles).

    One of the goals was the development of new mustard creams with innovative colours and flavours. Mustard creams are oil-in-water emulsions, but the practice is linked to medieval french vinegar traditions, introduced by the confraternity of Maîtres Vinaigrier-Moutardier. In the classic process, mustard grains are matured by immersion in vinegar; the phenomenon combines acid and enzymatic actions and solid-liquid extraction to mild the bitter/pungent taste. Thus, applying this ancestral practice, mustard (seeds, fragments, powder) was first submitted to maturation studies.

    Agrio et Emulsio project (POCI-01-0145-FEDER-023583) develops in vinegar and food emulsions areas. In line Agrio, vinegar technological ability enables the development of multiple products, by fermentative and non-fermentative prototyping. Articulating technological, laboratory and sensory tests and inspired both by the marinades in wine or vinegar of the Mediterranean gastronomy and in the traditional Portuguese recipe of “drunk” pear in red wine, two prototypes are undergoing final development, using sweet potato cultivars (Ipomoea batatas) as main ingredient. A sweet and sour “drunk” pickle has been developed by fresh pack pickling technology (without fermentation), using a spicy red wine vinegar with cinnamon and black pepper, sweetened with brown sugar and added Gin. The marinade was designed to be a ready-to-eat vegan product, with tofu and sweet potato previously salted in brine and then submerged in the marinade liquid. The marinade matrix is a diluted blend of red wine vinegar and regional liqueur wine from Ribatejo, flavored with red pepper, herbs and spices. Pre-salting in brine, maturation and the final heat treatment are fundamental for the quality and safety of both prototypes that were designed to provide innovation and convenience: new products with long shelf life, aims the preservation of seasonal/surplus raw materials.
  • Desenvolvimento de diferentes formulações de chutney

    Chutney (do Hindu Chatni), é um molho picante de origem indiana usado no acompanhamento de outros alimentos, dos quais, carnes frias, assadas, grelhadas e fondues. É um molho espesso, feito de frutas e hortícolas, açúcar, especiarias e, por vezes, vinagre. É provavelmente mais conhecido quando é usada a manga como a fruta base, mas também há de maçã, tomate e de misturas de frutas. Em termos tecnológicos, o Chutney é preparado com diferentes ingredientes (fruta, uvas passas, açúcar, hortícolas, gengibre, pimenta, vinagre, sal, entre outros), que são submetidos a uma cozedura, trituração e introdução de outros ingredientes. A tecnologia aplicada é muito simples podendo variar apenas na introdução dos ingredientes em diferentes tempos de cozedura, assim como obtenção de diferentes características químicas do produto final, nomeadamente, grau Brix, pH e acidez. O Chutney de diferentes composições poderá apresentar um potencial industrial dado que não exige um investimento muito elevado, tem baixos custos de produção face às margens potenciais e ainda à sua adaptabilidade a processos de produção já existentes, nomeadamente, equipamento para obtenção de compotas. Embora a venda de Chutney em Portugal, esteja associada ao produto Gourmet, é possível a sua produção e venda no mercado geral.Chutney (from Hindu Chatni) is a spicy sauce of Indian origin used in the accompanying of other foods, including, meats, baked, grilled and fondues. Is a thick sauce, made from fruits and vegetables, sugar, spices and, sometimes, vinegar. It is perhaps best known when the sleeve is used as a fruit base, but there are with apple, tomato and fruit mixtures. Technologically, the Chutney is prepared with different ingredients (fruit, raisins, sugar, vegetables, ginger, pepper, vinegar, salt, among others), subjected to cooking, grinding and introduction the others ingredients. The applied technology is very simple and can vary only in the introduction of ingredients at different cooking times as well as obtaining different chemical characteristics of the final product, namely Brix, pH and acidity. The Chutney with different compositions may present a potential industrial data that does not require a very high investment, have low production costs in the face of potential margins and also its adaptability to existing production processes, including equipment for obtaining compotes. Although the sale of Chutney in Portugal, is associated with the product Gourmet, is able to produce and sell in the market overall.
