As alterações climáticas e a daí decorrente escassez de água têm levantado preocupações na fileira vitivinícola, devido ao impacte que esta tem na produção e qualidade
do vinho. O uso eficiente dos recursos naturais e a subsequente redução dos custos
de produção, através da adoção de práticas mais sustentáveis, é hoje um objetivo
dos vitivinicultores. O projeto WineWaterFootprint consistiu na determinação da
pegada hídrica na fileira vitivinícola através do desenvolvimento de uma metodologia aplicada a estudos de caso. A pegada hídrica anual determinada foi de 686 e 1017
litros de água por litro de vinho produzido para os casos de estudo I e II, respetivamente. Os resultados obtidos revelam que
a pegada hídrica da etapa de produção da
uva representa mais de 98% do valor global.
A avaliação da sustentabilidade da pegada
hídrica permitiu identificar pontos críticos
e ineficiências, na vinha e na adega, passíveis de reduzir a pegada hídrica global.
Climate change and the resulting water scarcity have raised concerns in the wine sector due to its impact on wine production and quality. The efficient use of natural resources and the subsequent reduction of production costs, through the adoption of more sustainable practices, is today an objective of winemakers. The WineWaterFootprint project consisted in determining the water footprint in the wine industry through the development of a methodology applied to case studies. The results obtained revealed that the water footprint of grape production stage represents more than 98% of the global value. The annual water footprint determined was 686 and 1017 litres of water per litre of wine produced for case studies I and II, respectively. The assessment of the sustainability of the water footprint allowed the identification of critical points and inefficiencies, in the vineyard and in the winery, that can contribute to the decrease of global water footprint.
