A gastronomia é um elemento da cultura humana, garantindo a manutenção das diferenças culturais no mundo globalizado. A Reserva da Biosfera do Paul do Boquilobo situa-se num troço do rio Almonda. Em 1981 é distinguida como Reserva da Biosfera. O objetivo geral da tese é a valorização gastronómica da Reserva da Biosfera do Paul do Boquilobo, criando condições de diferenciação da região e valorização deste recurso endógeno. Na metodologia realizou-se inquéritos por questionário e entrevistas aos consumidores e restauração. Foi realizado um questionário de frequência alimentar, para recolha de dados sobre hábitos alimentares da população desta região.
Verificou-se que tanto os consumidores como a restauração consideram que a oferta de receitas tradicionais é importante para a valorização da gastronomia da região.
Para o QFA, recomenda-se um aumento da prática de exercício de físico e diminuição do consumo de sódio, aumento do consumo de fibra, folatos, cálcio, potássio e Vitamina D.
Gastronomy is an element of human culture, ensuring the maintenance of cultural differences in the globalized world. The Paul do Boquilobo Biosphere Reserve is located on a section of the Almonda river. In 1981 it is distinguished as a Biosphere Reserve. The general objective of the thesis is the gastronomic valorization of the Paul do Boquilobo Biosphere Reserve, creating conditions of differentiation of the region and valorization of this endogenous resource. The methodology was conducted by questionnaire and consumer interviews and restoration. A food frequency questionnaire was used to collect data on the dietary habits of the population of this region. It was found that both consumers and restauration consider that the supply of traditional recipes is important for the appreciation of the gastronomy of the region. For the FFQ, it is recommended an increase in the practice of physical exercise and decrease of sodium consumption, increase of consumption of fiber, folates, calcium, potassium and Vitamin D.
