- Stability study of low caliber Pera Rocha osmotically dehydratedPublication . Basto de Lima, Maria Gabriela; Neves, Ana Maria; Marques, RafaelThis work consisted of the application of osmotic dehydration to low-caliber Rocha pear. The initial values of soluble solids content indicated that the fruit was the same degree of ripeness. The sliced pear was immersed in various sucrose solutions (20%; 30%; 40% (w / w)), at various temperatures (20 ºC; 30 ºC; 40 ºC), for 240, 360 and 480 minutes. At the beginning and the end of the process, the parameters determined were: weight loss; water loss; solids gain; water activity (aw); moisture content and soluble solids content. The moisture content and aW decreased over osmotic dehydration process, with even more pronounced reduction at 360 minutes followed by a plateau of constant values up to 480 min. The immersion time and temperature influenced the analyzed parameters, but the sucrose concentration was the most relevant parameter. The immersion time selected was 360 min. An untrained taster's panel performed sensory evaluation and assigned higher scores to the assay 30% (w / w) sucrose and 30 ° C. In this, a microbiological evaluation of the stability of the dehydrated pear was carried out for six months, which proved to be microbiologically stable and safe. The absence of populations of bacteria of the family Enterobacteriaceae, demonstrates the application of good hygiene practices. There was no growth of Staphylococcus coagulase positive and Clostridium sulfite-reducing spores ensuring product safety. The very low value of aw (0.217) contributed greatly to these results, promoting the inhibition of microbial growth, preventing the deterioration of the product, preserving its characteristics, making it stable and safe. The parameters of the proximal analysis: energy; moisture content; carbohydrates; crude protein; total lipids; total fiber and ash, allowed to obtain the nutritional composition of the dehydrated pear and differences were verified in relation to the consulted literature.
- Pregnancy in times of COVID-19 pandemic:quality and safety of health care during pregnancy carePublication . Gens, Felisbela; Ferreira, Quirina; Vivas, CarlaThe current COVID-19 pandemic situation makes the whole health care delivery environment more demanding and uncertain, creating in organizations the need to redefine strategies to meet new challenges and people's needs. In the field of maternal health, specific circuits and procedures have been ensured for all pregnant women in order to prevent or reduce the risk of infection by SARS-CoV-2. This study aims to determine the level of quality of health care during pregnancy and to assess the satisfaction of pregnant women with regard to maternal health care provided in the current context of the COVID-19 pandemic. This is a quantitative, observational, analytical study, whose sample includes pregnant women aged 36 weeks and over. The information was collected between November and December 2020, through the application of a survey encompassing the Quality of Parental Care Questionnaire (Sword, Heaman and the QPCQ Research Team, 2013 translated and validated for the Portuguese population by Rodrigues, 2017), clinical, socio-demographic and access and security variables related to the current COVID-19 pandemic. The results obtained project a positive relationship between the level of satisfaction of pregnant women and the perception of the level of quality of prenatal care in all dimensions of the instrument. In the specificities related to access and safety in the current COVID-19 pandemic, teleconsultation presents itself as an important tool in prenatal education and accessibility to health care during pregnancy care. A model of pregnancy care that encompasses telehealth becomes indispensable to meet the needs created by the COVID-19 pandemic, improving flexibility, access and proximity to maternal health care.
- Healthy lifestyle behaviours and its determinants in a sample of Portuguese adultsPublication . Pinto, Paula; Páscoa, Andreia; Andrade, VandaFactors such as high adherence to the Mediterranean Dietary Pattern (MDP), physical activity (PA) and non-smoking, are associated with reduced mortality risk. This reduction is even more substantial when these healthy lifestyle factors are joined [1]. Thus, this study aimed at evaluating individual motivation to change lifestyle habits. An online questionnaire was designed and distributed among academic, institutional, and personal contacts between April and June 2020, with a total of 206 responses. Most of the participants were women (72,8%), with ages between 18 and 40 years old (79,1%), and resident on urban areas (94%). When inquired about if they would be willing to increase their well-being though adopting a healthier lifestyle, 83% answered yes, and 16% reported that they did not think about the subject. Most of the respondents reported that they would have benefits by changing three lifestyle behaviours: i) implement MDP habits (80%), mainly, increase consumption of water, vegetables and fruits, and decrease consumption of sugar; ii) increase practice of PA (70%), and iii) sleep seven to eight hours per night (45%). With respect to factos that would promote na increase in PA, most of the participants referred time as the main factor to include PA in the daily routine (61%). Other factors were the existence of appropriate places for PA practice near the residence (30%), the orientation of health professionals (16,5%), and the promotion of PA events in the area of residence (16%). In conclusion, food habits and PA were highlighted as the main factors influencing health and well-being of participants, with the lack of time as the most appointed factor for sedentarism. 1.Prinelli F, Yannakoulia M, Anastasiou CA, Adorni F, Di Santo SG, Musicco M, Scarmeas N, Correa Leite ML. - Soft skills in different professional environmentsPublication . Pinto, PaulaNowadays’ workplace is constantly changing due to increasing knowledge and technology. Individuals must adapt to different working environments and new ways of thinking, which involves a wide set of “soft skills”. A recent study with employers from several sectors ranked communication, teamwork, and being committed to work as the most important skills to enhance graduate employability [1]. This review aimed to add knowledge on the types of soft skills more required by employers in different professional areas. A search on Web of Science was performed for the last two years with the search terms: “soft skills” OR “transferable skills” OR “transversal skills”. A total of 143 papers were retrieved, and 109 relating to adults were selected for further analysis. Skills most required by employers from different professional settings were: i) business: integrity, communication, courtesy, responsibility, social skills, positive attitude, professionalism, flexibility, teamwork, work ethic; ii) research: inspiring trust, emotional intelligence, strategic thinking, empowering others, flexibility; iii) food industry: listening effectively, team-work skills; iv) sport industry: social skills, teamwork, self-confidence, being proactive, ethics, problem solving skills. With the levelling of technical skills in European labour market, soft skills emerge as an essential factor in career development. The most required skills from employers were interpersonal skills such as communication, social skills, and teamwork, and intrapersonal skills such as ethics and flexibility. Coaching is a valuable resource to develop these soft skills. Coaching practice focus on people, instead of only on tasks, and has been shown to provide a practical way to raise confidence, awareness, and build supportive and collaborative skills within a team [2]. - Quality of working life in the context of the COVID-19 pandemicPublication . Leal, SusanaThe COVID-19 pandemic has significantly influenced the way managers and employees do their work. The aim of this work is to briefly study the impact that the COVID-19 pandemic may have on the different facets of quality of life at work (QLW). It studies the effects that the pandemic has had, or may have, on work-family conciliation, working conditions, job satisfaction, work control, affective commitment, occupational stress, and general well-being. A theoretical reflection of the mentioned themes is presented, whenever possible referring to evidence existing in other empirical studies. The COVID-19 pandemic has a direct and indirect impact on all facets of QLW. For each facet of QLW, the challenges and/or opportunities that this new reality presents to the management of organizations are also indicated. Today, the management of organizations, in the face of the constraints that COVID- 19 has brought, requires from managers innovative and creative approaches in the way human resources are managed. The work environments most exposed to the virus face even more difficulties in maintaining the QLW of their employees.
